Z-Axis to offset or to not offset

When leveling my bed, the Ender 3 Pro instructions indicate the nozzle should be an A4 paper width from the bed at the Z-axis, the some as the 4 corners. However, several sites (YouTube) insist the nozzle should just touch the bed irrespective of the four corners have an A4 space

Which is it?
