I keep reading horror stories about large format Epson printers with clogged heads
Apparently low humidity is a serious contributor to this problem
I wouldn't be surprised to find out that during the winter months the humidity inside my house struggles to reach 10%
Can anybody recommend me dehumidifier that should work well in a room approximately 14' x 14' ?

It is High humidity that causes printing clogs, because the filament absorbs moisture and reacts by over-expanding when heated. You would need a dehumidifier if the humidity was too high in the summer.
I imagine too-low humidity could conceivably be causing static electricity and printer electronics glitches. Maybe try not touching the printer while it is working?
In any case, it is pretty much the storage of filament when it slowly absorbs moisture, so keep it in a sealed bin with a small moisture-absorbing pack to keep it a dry environment.
